Rice for pilaf: Rapan and Khazar
This section covers rice for pilaf, side dishes and Oriental cuisine. Buyers often look for it as medium-grain rice: Rapan and Khazar have longer kernels than Flagman. According to VNII Rice, the length-to-width ratio of the paddy kernel is 2.2–2.3 for Rapan and 2.1–2.2 for Khazar, against 1.9–2.0 for Flagman. By scientific classification, all three varieties are short-grain.
Varieties
- Rapan — in the State Register since 1996 (code 9300643). Amylose 20.6% according to the Federal Rice Research Center. For pilaf, fluffy side dishes and salads.
- Khazar — in the State Register since 2000. Amylose 18.3–19.0% according to VNII Rice. For pilaf, side dishes and Oriental cuisine.
The more amylose rice contains, the fluffier it is after cooking. That is why these varieties are chosen for pilaf: the kernels absorb fat and broth and do not stick together.
