These are variety characteristics. The values for a specific lot, such as moisture, broken kernels and impurities, are stated in its quality certificate.

What amylose means

Rice starch consists of amylose and amylopectin. The less amylose a kernel contains, the stickier the cooked rice; the more amylose, the fluffier it is. Texture also depends on milling, the freshness of the lot and the cooking method.

How to choose

  • Pilaf. Rapan or Khazar: breeders recommend both for pilaf.
  • Fluffy side dishes. Rapan.
  • Porridge, casseroles, soups. Osman.
  • Sushi and rolls. We match the lot to your process based on a sample.
  • Food manufacturing. The choice depends on your process. Send your requirements, and we will select the variety and the GOST grade.

Grade under GOST 6292-93

The variety (Rapan, Khazar) and the grade (premium, first) are different things. The grade is set by analysis of the lot. The key indicator is the share of broken kernels: no more than 4% in premium grade and no more than 9% in first grade. Moisture is no more than 15.5%.
